One of the ways I make entertaining look effortless is to always serve an easy and simple appetizer. It helps to keep my guests focused and entertained while I put the finishing touches on the meal. Best of all, appetizers keep my guests out of the kitchen and away from view should a mistake bubble to the surface.
It was not too long ago when I decided to have a couple of close friends over for an evening supper in the backyard. I was planning to grill saucy barbecued chicken along with a couple new salad recipes I was testing for the summer. With only four people, including me, for this meal; I opted to not prepare an appetizer.
Of course, the preparations for the meal went off without a hitch with the exception of one thing. I forgot to check the gas on the grill! Halfway through cooking the chicken, the gas ran out and I had to transfer the chicken to the oven. Knowing this would take considerably longer than planned, I opened the fridge in desperation to find anything that could be whipped into a quick appetizer.
My inspiration for this dip was a large block of blue cheese I had sitting on the bottom shelve of my fridge. Be careful to not over season the dip with salt because the bacon and blue cheese are already pretty salty.
Bacon & Blue Dip
6 strips of bacon, rough chopped
2 green onions
8 oz. cream cheese, softened
7 oz. plain Greek yogurt
½ cup crumbled blue cheese
¼ tsp. Worcestershire sauce
Cook the bacon pieces in a medium fry pan over medium heat until crispy. Remove from the pan, drain on paper towels and allow to cool. Roughly chop the white and green parts of the green onion.
Add all the ingredients to a medium mixing bowl and mix until completely combined. Chill until ready to serve. Makes roughly 2 cups of dip.
Author’s Note: You can serve this dip with a variety of sides including fresh cut vegetables, toasted bread, potato chips and crackers.
